Pumpkin Spice Overnight Oatmeal

Today marks my first pumpkin recipe of autumn! In my opinion, pumpkin, allspice, and cinnamon are what “make” fall so special, and seeing all of the pumpkin items out on the shelves makes my little culinary heart happy.IMG_2743While I was initially tempted to make a pumpkin pie, I decided to restrain myself and wait until the holidays were a bit closer. Instead, I made these amazing pumpkin spice overnight oats. They are incredibly simple to make, keep you full, and taste like fall in a cup.IMG_2764The secret ingredient to these yummy oats, is flaxseed.  If you are unfamiliar with flaxseed, click here for an overview or here for another way to incorporate it into your cooking! Besides the added nutritional benefit, flaxseed brings a warm nutty flavor to these oats which, I love.

IMG_2751Oh, and those pumpkin seeds on top? They’re spiced pumpkin seeds from Trader Joe’s which, makes them even better than the original! Seriously, these things are “eat me by the handful” good. They’re so yummy, in fact, I’m including them in another post this week (so be on the lookout).

IMG_2735And because these are overnight oats, all you have to do is throw the ingredients into a bowl before bed then wake up and enjoy! I’m talking, 10 minutes “total prep time” easy.

Serves: 3
What You'll Need
  • 3 cups rolled oats
  • 1.5 cups almond milk
  • 2 heaping tbs. pumpkin butter (I found mine at Trader Joe's)
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ cup flax seed
  • ¼ cup spiced pumpkin seeds for garnish
Instructions
  1. In a large bowl, combine the above ingredients (except the pumpkin seeds). Mix well, then leave in the fridge overnight. Wake up, sprinkle some pumpkin seeds on top and enjoy!
