In my opinion, pumpkin, allspice, and cinnamon are what “make” fall so special, and when I see all of the pumpkin items out on the shelves it makes my little culinary heart happy.
While I was initially tempted to make a pumpkin pie, I decided to restrain myself and wait until the holidays were a bit closer. Instead, I made these amazing pumpkin spice overnight oats. They are incredibly simple to make, keep you full, and taste like fall in a cup.
Pumpkin Spice Overnight Oats Ingredients
The secret ingredient to these yummy oats, is flaxseed. Besides the added nutritional benefit, flaxseed brings a warm nutty flavor to these oats which, I love.
This easy overnight oats recipe also features rolled oats, also known as old fashioned oats, but be careful as quick oats and steel cut oats will not work. I also included an abundance of fall flavors including pumpkin butter, cinnamon, nutmeg and almond milk. Did I mention this recipe is entirely vegan and dairy-free? Of course, you can use milk in place of the almond milk, if you prefer.
Oh, and those pumpkin seeds on top? They’re spiced pumpkin seeds from Trader Joe’s which, makes them even better than the original! Seriously, these things are “eat me by the handful” good. They’re so yummy, in fact, I’m including them in another post this week (so be on the lookout).
How to Make Pumpkin Spice Oats
Since these are overnight oats, all you have to do is throw the ingredients into a bowl before bed then wake up and enjoy! I’m talking, 5 minutes “total prep time” easy. Yes, it’s that simple!
Overnight Oats Tips
Add more toppings – There are so many ways to customize these oats to your like by adding in fruit, nuts or even peanut butter, chocolate or Nutella. Add the toppings as layers instead of mixing.
Use a jar or mason jar – These are perfect for mixing and storing in the fridge.

Ingredients
- 3 cups rolled oats
- 1 1/2 cups almond milk
- 2 heaping tbs pumpkin butter (I found mine at Trader Joe's)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup flax seed
- 1/4 cup spiced pumpkin seeds, for garnish
Instructions
- In a large bowl, combine the rolled oats, almond milk, pumpkin butter, cinnamon, nutmeg and flax seed.
- Mix well, then leave in the fridge overnight. Wake up, sprinkle some pumpkin seeds on top and enjoy!
