How is everyone’s Monday going? Hopefully, you had such an amazing weekend that heading back to work came as less of a blow. But, if not, I’ve got some serious comfort food to help ease you into the grind.

Cracked Wheat Berries with Coconut Milk & Mixed Fruit (A spin on an old classic)

If you guys are anything like me, steel cut oats is your go-to healthy, but filling breakfast. But, after a while, it can get kind of boring (what can I say? I like a bit of variation in my breakfast routine). So I’ve decided to add a new staple into your breakfast roundup, cracked wheat berries!Cracked Wheat Berries with Coconut Milk & Mixed Fruit (A spin on an old classic)

In case you’ve never heard of cracked wheat, it’s a wonderful source of nutrition (it’s a completely whole grain that helps with heart health ) and when paired with fresh fruit, coconut milk, and a touch of honey for sweetness you’re looking at a superfood with staying power! And it is seriously the perfect way to help power you through a busy work week (especially since you can make it in a crock pot overnight!).Cracked Wheat Berries with Coconut Milk & Mixed Fruit (A spin on an old classic)

So make a big batch of this tonight, and simply heat it up during the week! Add whatever fruit you like (even add a touch of cinnamon, if you’re feeling adventurous) and hopefully we can all make it through to the weekend 🙂

Serves: 2 servings
What You'll Need
  • 1 cup cracked wheat (I used Red Mill brand)
  • 1 cup coconut milk (optional)
  • 1 tbs. honey (optional)
  • ¼ cup blueberries
  • ¼ cup raspberries
Instructions
  1. Cook cracked wheat according to package instructions. (If making a large batch, stop here and refrigerate the cracked wheat in a sealed container until ready to use)
  2. Add to half of the mixture to each bowl and top with coconut milk, honey, and the berries.
  3. Serve immediately.
