Good morning! How have you guys been?
My life has been a little crazy these past few months, but luckily we were finally able to find a house and we are now officially moved in!! Which means I now have a fully functioning (and beautiful!!) kitchen to start creating recipes from! After a month or so of a lack of inspiration, my mind is racing with so many recipe possibilities!! I’m pretty excited to start sharing them all with you.
First up, however, is this incredible garden salad made with just about any veggies you have on hand! The most important part of this salad is the dressing, and the avocado!
I’m a sucker for a robust salad with tons of veg topped with a rich (but healthy!) dressing!
The dressing I used here is actually from a family favorite restaurant nearby (so I can’t take any credit) but I thought I would link over to the “official” recipe in case you wanted to give it a go! It is seriously one of the best Italian style dressings I’ve ever had and is full of gorgonzola cheese, olive oil, garlic and vinegar so if you like any of those things, this dressing is for you!
Anyway, I am so glad to be back sharing recipes with you guys and I just wanted to say thanks for following along! You’re the best!
- 2 heads romaine lettuce (shredded)
- 1 bell pepper sliced
- ¼ onion, thinly sliced
- ½ avocado, cubed
- 2 tbs. parmesan (optional)
- ½ cup mini cherry tomatoes
- ½ cup cubed ham (optional)
- 2 tbs. crutons
- Italian Dressing Recipe
- In a large bowl, add the lettuce, pepper, onion, avocado, parmesan and mini tomatoes.
- Add in the pre-made Italian Dressing (link above) or dressing of your choosing and mix together until well combined.
- Serve immediately
