Italian Salad with Garlic Dressing
Serves: 4-6 servings
What You'll Need
  • Salad:
  • 2 medium chicken breasts
  • 1 tbs. olive oil
  • Pinch of salt
  • A few cracks ground pepper
  • 1 head of romaine lettuce, roughly chopped
  • 2 medium tomatoes, sliced
  • ½ red onion, thinly sliced
  • ½ cucumber, sliced
  • Fresh mozzarella cheese
  • Creamy Garlic Dressing
  • 3 garlic cloves
  • 1 tsp. oregano
  • ¾ cup apple cider vinegar
  • The juice of one lemon
  • 1 tsp. salt
  • A few cracks fresh pepper
  • ¼ cup olive oil
  • 1 tbs. capers
  1. Add the chicken breasts to a medium-sized bowl and top with the olive oil, salt and pepper and toss to coat completely.
  2. Place a pan over a medium-high heat.
  3. Place the chicken breasts, top-side down onto the pan and let cook for about 6-8 minutes on each side.
  4. Once the chicken is finished, set aside to rest.
  5. Add all of the veggies into a large bowl.
  6. To make the dressing add all of the ingredients, except for the capers and olive oil into a food processor.
  7. Pulse the ingredients together then slowly add the olive oil while blending.
  8. Place in a container and add the capers.
  9. Pour about half of the dressing over the salad, and top with additional capers if desired, sliced chicken and the mozzarella cheese.
