Jalapeño Fritter Burger with Garlic Aioli

What You'll Need
  • 2 lbs. grass-fed ground beef (I used 85% lean 15% fat)
  • 3 garlic cloves (I used a microplane instead of mincing)
  • 1 tsp. salt
  • 2-3 Cracks ground pepper
  • 4 brioche buns
  • 8 jalapeño poppers (I used this recipe)
  • 1 large tomato (sliced)
  • 1 avocado
  • 4 slices provolone cheese
  • 1 head butter lettuce
  • Aioli
  • 2 egg yolks
  • 1 tsp. salt
  • ⅓ cup olive oil
  • 3 cloves garlic
Instructions
  1. To a food processor, add the yolks, salt and garlic and pulse together. Slowly add the olive oil while blending until it forms an emulsion.
  2. Transfer to a small bowl and place in the fridge until ready to use.
  3. Prepare a parchment-lined baking sheet.
  4. In a medium-sized bowl, add the ground beef and minced garlic, salt and pepper and mix together with your hands.
  5. Form 4 burgers (using a large ice cream scoop, I used about 3 scoops per pattie) and place on the baking sheet.
  6. Heat a grill pan over a medium-high heat.
  7. Once hot, add the burgers (I cooked two at a time) and cook for about 2-3 minutes on each side at a high temp then reduce to a medium heat and cook for another 4-6 minutes (this yields a medium burger).
  8. Once your patties are finished cooking, add the cheese to the tops and place the brioche buns (sliced in half) onto the grill pan. * if there is too much residue on the pan, feel free to wipe with a paper towel before toasting the buns
  9. Once finished, layer the hamburger as you see fit! Top with the fritters and spread the aioli on both halves of the bun!
  10. Serve immediately.
