Pineapple Dole Whip Float

What You'll Need
  • 4 cups pineapple juice (I bought mine from Trader Joe's)
  • 2 TBS. pineapple juice
  • ½ cup crushed pineapple (canned works best)
  • 1 can coconut cream (refrigerated over-night)
  • Optional: 1 cup orange juice mixed with 1 cup pineapple juice to make the second drink pictured above
  1. Refrigerate the coconut cream overnight.
  2. The next day, pulse together the 2 TBS of juice with the crushed pineapple and refrigerated coconut cream (make sure to use just the cream NOT the liquid at the bottom of the can).
  3. Place mixture in a small bowl and freeze for 20 minutes.
  4. In a glass, pour in 2 cups of juice then top with the chilled coconut mixture!
  5. Pro Tip: If you want to get fancy, use a piping bag to get a "swirled" effect. I would advise against using a metal tip (the mixture is a bit thick) but if you cut off the tip of the bag it should work just fine!
