Quinoa Stuffed Peppers

What You'll Need
  • 6 small potatoes (halved)
  • 1 yellow onion
  • 2 garlic cloves
  • 1 tomato (diced_
  • 2 cups cooked quinoa
  • 2 cups ground turkey
  • ½ tsp. salt
  • A few cracks of ground pepper
  • 1 bunch fresh parsley
Instructions
  1. Cook 2 cups of quinoa (according to package instructions).
  2. Once cooked, transfer to a large bowl and add the tomato and toss together.
  3. In a medium sized pan, add the butter, garlic and onions then cook until they are slightly golden brown and translucent.
  4. Add the ground turkey, salt and pepper and brown.
  5. Add the halved potatoes and get a good sear on all sides then add the chicken broth, cover with a lid and let cook for about 10-15 minutes (or until tender).
  6. Hollow out four bell peppers and stuff with the quinoa mixture then add to a casserole dish along with the potato mixture.
  7. Top with shredded mozzarella cheese and place in the oven on Broil for about 3-5 minutes or until the cheese has melted and begins to turn golden brown.
  8. To serve, top with fresh parsley.
