Pumpkin & Coconut Pancakes

What You'll Need
  • Pancakes
  • 1 cup flour
  • 2 TBS. baking soda
  • ½ cup canned pumpkin
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ cup powdered sugar
  • ½ cup almond milk
  • To serve:
  • ½ cup heavy coconut milk mixed with 1 tsp. cinnamon
  • ¼ cup shredded coconut
  • Maple syrup
  1. In a medium-sized bowl, combine all the ingredients above. If your mixture is too thick, simply add more almond milk (1 TBS. at a time), if too thin add more flour (1 TBS. at a time).
  2. In a skillet over medium-high heat (greased with PAM) cook pancakes until golden brown.
  3. To serve, simply add toppings as you see fit!
